30 days & ways to greater green – Tea with your Tivo

Is your Tivo (or DVR) set for the Royal Wedding Watching festivities starting tomorrow at 4am? Well, whether you’re one of the brave & committed souls who is actually rising before the crack of dawn to turn on the tube to see who Kate is wearing…or tuning in watch the actual wedding…here’s a little pick me up for your tea cup, with a side of scrumptious strawberries (on your cucumber sandwiches, natch).

Now onto the scrumptious…and if you’re heading out in the am in search of said strawberries, Whole Foods Market is having a sale on their organic strawberries in stores tomorrow.

Cucumber Sandwiches with Strawberries and Watercress

For 4…
8 large strawberries
4 ounces (8 tablespoons) Neufchâtel, softened
1 tablespoon chopped mint
1 teaspoon lemon zest
1/2 seedless cucumber, thinly sliced
1 bunch watercress, long stems trimmed
8 slices whole wheat sandwich bread

Chop 4 of the strawberries and slice the remaining 4. In a large bowl, mash chopped strawberries with a fork. Add Neufchâtel, mint and zest and mix until well combined. Spread strawberry mixture evenly between slices of bread. Arrange cucumbers, sliced berries and watercress over half of the slices. Top with remaining slices to form sandwiches, then cut in half and serve.

Per serving: 230 calories (70 from fat), 8g total fat, 4g saturated fat, 20mg cholesterol, 380mg sodium, 28g total carbohydrate (5g dietary fiber, 7g sugar), 10g protein
